FILOMENA'S SHOULD BURY THIS BURRATA

Even though I was in DC just for the day, a friend insisted that we go to FILOMENA RISTORANTE, which is in the heart of Georgetown (1063 Wisconsin Avenue, NW Washington, D.C.).
▫️
Open since May 23, 1983, this place is often described as the area’s best Italian restaurant, with their website boasting that their “old-world traditional recipes” have been enjoyed by “multiple U.S. presidents,” and “countless stars,” including Jimmy Stewart, Cindy Crawford, Goldie Hawn, Denzel Washington, Robert De Niro, Alex Ovechkin, Glenn Close, and B.B. King.

Our waiter recommended that we start off with their “Burrata di Mozzarella alla Caprese,” which is described as: “Burrata Cheese Made Daily In Our Own Kitchen—A ball of Italian Fresh Mozzarella with a soft center of Stracciatella and Mascarpone Cheese—served with sliced Fresh Tomatoes, fresh Basil Leaves, Extra Virgin Olive Oil and Balsamic.” ($19.99 pre-tax/tip)
▫️
Some food historians believe this salad was first whipped up in the early 1920s by a chef at Hotel Quisisana (situated in the center of Capri (Italy)). While the tomatoes in our dish were fresh and savory, we had an issue with the cheese. We felt the texture was off, and that it was too soft and were looking for more of a contrast — like a soft shell wrapped around a creamy center with more of a “buttery” consistency. Because what we got tasted more like a compacted ricotta cheese, the item rated a lowly “C-.” (For $24 (post-tax/tip) we expected better.)
▫️
We suggest you cut the cheese.
