BAE'S BAD BEEF

While we were at Bae Korean Grill — an “upscale Korean barbecue dining experience featuring state-of-the-art Shinpo grill tables,” at the Seminole Hard Rock Hotel & Casino, 5711 Seminole Way, Hollywood, FL — our server strongly suggested that we go for their “Kalbi Jim, 24 hr braised short rib, netsuke sauce, stir-fry vegetables.” ($45)

Now this offering, which is also spelled galbijjim or kalbijjim, is a very popular Korean dish which requires some preparational effort but often yields an exceptional result.

Traditionally made with bone-in meat, you’ll frequently find shitake mushrooms, chestnuts, dried dates, ginkgo nuts, radishes, and carrots added to the mix. And for the marinade: green onions, soy sauce, water, garlic, rice wine, Asian pear/pureed onion, sugar, sesame oil, and pepper (to taste) — which results in a nutty, salty, sticky, sweet sauce. But none of those notes were terribly pronounced here. We also couldn’t detect any of the marbling or beefy flavor you would normally associate with a dish of this type. It was all “blandish.”

While it wasn’t awful, a guest described it as an “unexciting, basic dish.” So, it wasn’t a surprise when it scored a “C-.” (But just between us, I thought it deserved an “F,” given the meager portioning and $56+ price point (after tax/tip)).
