SOME SMOKING SALMON!

DUNE by Laurent Tourondel, a restaurant at the base of Auberge Beach Residences & Spa — at 2200 N Ocean Blvd, in Fort Lauderdale — promises “an elevated dining experience unlike any other.”

While we’d beg to differ (based on some of the past meals we’ve had there), we were certainly having a blast at their Happy Hour, which runs from 4-6 pm, Monday thru Saturday. Our “Tomato-Buratta [sic] Flatbread,” which we reviewed the other day, was quite strong. So, we were looking forward to trying our next selection which was the “Salmon Roll – fresh & smoked salmon, avocado, cucumber, daikon sprouts” ($8).

As we’ve noted before, salmon wasn’t traditionally used for sushi, until fairly recently, as it wasn’t previously considered safe to eat. But thanks to improvements in refrigeration, fish farming, and some savvy marketing techniques, the Norwegians eventually convinced Japanese chefs to incorporate the fish into their dishes around the mid-90’s, and mainstream acceptance gained traction soon thereafter.

It’s typically a smooth-tasting, buttery protein which pairs incredibly well with the creamy nuttiness of avocado (which some describe as “grassy” and “earthy”). While the aioli dots placed atop each piece were totally unnecessary, luckily that condiment didn’t overwhelm and this item scored yet another impressive “B+.”

If you happen to be in the area, you may want to catch this fish dish … and roll with the spectacular ocean view. As a guest cornily remarked, “smoking may be deadly for humans, but it sure was great for this salmon.”
