COMPANY EGGS?

Hi Lucas --

I'm lucky my mom is RuthAnn Peters, a loving and caring lady born in Oshkosh, Wisconsin and raised in Swedish and Lutheran traditions in the Midwest.

She turned 80 a few months ago and is still going strong. She has been absolutely dedicated to me and my three younger sisters, as she is today to her 7 grandchildren.

She is famous for her pretty smile and easy laugh, her prodigious consumption of coffee, her Instagram and her comfort food.

Today, we had "Company Eggs," which is something Mom served when we had visitors -- or "company." (It's not a reference to corporate farming!)

Anyways, maybe you will enjoy this comfort food as I have.

Happy Mother's Day to all the mothers who love us, help us, and worry about us! Put your feet up!

Recipe for "Company Eggs"
Serves 12

1/2 lb Gruyere cheese grated
4 tbsp Butter
1c Heavy cream
1/2 tsp Salt
Dash of pepper or to taste
1 1/2 tsp dry mustard
12 eggs beaten
(Kick it up with chopped green chiles if you want some heat!)

Serve with some breakfast meat, toast, or other bread product and fruit.
