Have you never tasted liver? It's an absolute wonderful meal. I have made Duck L'Orange, and Peking Duck is fabulous. I love the ducks, such majestic creatures. But you are right about foie-grass, it is wrong that it has been going on since 2500 BC, the Egyptians started the practice, I do agree that force-feeding is cruel, and that is why so many countries have outlawed it. But for me, I love liver, whether it's duck, chicken, beef. By far the best I've tasted is caribou. Bon Appetite! And maybe it is elitism to be served this on a plane, and maybe just once you should try flying first-class.
